The retarder proofer chambers is designed for both artisan bakers as well as the demanding industrial sector. It is equipped for rack or baking tray trolleys and can handle all types of production to optimise the desired result in terms of moisture, alveolar structure, or aroma development.

The Bi-Tronic SLIDE interface allows all types of retarding and proving: slow proving, traditional, linear or stepped proving and steaming. Allowing temperature and humidity to be controlled perfectly.

Regardless of the cycle start time, the dough is always proofed when placed in the oven.
